Sopa de Ajos

Garlic soup

250 g old white bread
6 dsp olive oil
8 cloves of garlic, chopped
1 tsp paprika
1 tsp cayenne pepper
1 l meat stock
4 eggs


Cut the bread into cubes. Heat the olive oil in a pan and fry the bread cubes until golden brown. Add the garlic and fry until it takes on some colour. Season with the paprika, cayenne and salt and pour on the stock. Cover and simmer for about 15 minutes. Divide the soup among 4 clay bowls. Carefully break an egg into each bowl and place in a pre-heated oven for about 10 minutes at 200° Celsius until the eggs are set. Serve the soup very hot.
