Pisto Manchego

Vegetable stew in a clay pot

100 ml olive oil
2 onions, chopped
2 cloves of garlic, finely chopped
4 small courgettes, diced
One red and one yellow bell pepper, diced
Salt and pepper
2 dsp smooth parsley, chopped


Heat the olive oil in a clay pot. Sauté the onions and garlic.

Add the vegetables, season with salt and pepper and leave to stew at a medium heat for about 15 minutes until the liquid has evaporated. Sprinkle with parsley before serving.
